The almond or Prunus dulcis is the main ingredient in this spread and, like the hazelnut, has a high nutritional value. It is grown mainly in Spain and Italy, but also in California and in some South American countries.

The nutritional value of the almond is similar to that of the hazelnut. However, there are slight but very interesting differences worth pointing out.

· Almonds have the highest calcium content of all the nuts – 270 mg/100g. This is a very important factor for people who either don’t care for dairy products or who are lactose intolerant. And, of course, this is even more significant if those people also need more calcium in their diets.

· Like the fat contained in the hazelnut, the fat of the almond is very beneficial for the cardiovascular system. It contains high levels of oleic acid which makes it an ideal food for maintaining arterial health.

· Another distinctive characteristic of the almond is that it is the nut with the highest dietary fibre content. This makes it a highly desirable food for promoting digestive regularity and intestinal flora.

· The high magnesium content of almonds is another factor to keep in mind. Magnesium is a mineral that is essential for various physiological processes and our diet rarely affords us the amounts we need.

· Finally, it is important to note that almonds are high in zinc, a mineral which plays a role in the proper functioning of the immune system, among many other things. In other words, zinc is a mineral that helps keep our defences up.
